Apex · Coastal · Country · Food · Fuquay-Varina · Holly Springs · Oak Island · Southport · Tip Talk

I love pumpkins. This time of the year, I am all over Halloween and pumpkins. These easy biscotti cookies are a real treat for this time of year.  With the smell of fall, the aroma while these pumpkin spice biscotti are baking is wonderful. We enjoyed this fall twist on an Italian cookie. Using a spice cake mix helps to cut down on the preparation steps. Adding canned pumpkin and pumpkin spice adds a nice depth of pumpkin flavor to the cookies. The nutty pecans add a bit of crunch. Drizzling with melted colored chocolate adds to the pumpkin feel of the biscotti.

Ingredients

  • 1 box spice cake mix
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/2 cup melted butter
  • 1/2 cup canned pumpkin
  • 1/2 teaspoon pumpkin pie spice
  • 1/2 cup chopped pecans
  • 10 - 15 orange chocolate candy disks

How To Make pumpkin spice biscotti

Step 1
Preheat oven to 350 degrees F. Line a cookie sheet with parchment paper.

Step 2
Combine cake mix, flour, 2 eggs, melted butter, pumpkin puree, and pumpkin pie spice in a mixer bowl.

Step 3
Mix for about 2 minutes.

Step 4
Add the pecans and stir into batter.

Step 5
Divide the dough into two 2 x 8 inch rectangles, about 1 inch high.

Step 6
Bake for 30-35 minutes. Remove from oven. Let cool 10 minutes.

Step 7
Slice each rectangle into 1/2 inch thick slices. Slicing on an angle gives you more cookies.

Step 8
Lay the slices on their side and bake 10 minutes longer.

Step 9
Cool cookies completely. Then, melt the orange chocolate and drizzle it over each cookie.
